crockpot burrito bowls

crockpot burrito bowls have become a staple in our home because they are so easy, and you are able to interchange the ingredients to suit your personal tastes. I will list the ingredients that we use, but keep in mind you are free to change it up in any way you choose! we often mix up chicken & beef to keep it different! we have served them as tacos, or as bowls, or as a dip! SO many people have raved over this recipe, and it is just so easy. here you go!!

ingredients:

  • 1 lb ground meat or chicken breast
  • medium onion
  • 1 cup of brown rice
  • 1 cup of broth (choose your favorite!)
  • 1 can of corn ( I used a frozen bag since I buy in bulk at Sams club)
  • 1 can of black beans
  • 1 can of Rotel tomatoes
  • 1 tsp. ground cumin
  • fresh cilantro
  • salt & pepper to taste

instructions:

step 1: (if using chicken breast, skip this step!!) if you are using ground meat, brown in it in a pan before putting it into a crock pot. my husband and i love garlic so we always add fresh garlic or garlic powder to meat when we brown it. we will often use ground venison for this recipe since we have a ton of it!! however, I personally really love it with chicken.

step 2: pour in your chicken broth. add in the spices! I add garlic powder here too. whisk together. lay in your chicken breast, or your ground meat.

step 3: add rice, corn, beans, and rotel ( do not drain!).

step 4: mix together. make sure the rice and bean mix has plenty of juices to cook the rice. if it looks a little dry, add more broth.

step 5: cook on low for 4-6 hours. I just turn it on before I leave for the day!! It does not overcook.

step 6: if you used chicken breast, be sure and allow time to shred chicken before serving! I just pull out the breast, shred, and then mix right back in.

step 7: serve with salsa, sour cream, guac, etc. (all the yummy Mexican goodies!!!) my husband even makes a burrito out of it!! so versatile. enjoy!!!
